As a registered dietitian nutritionist, my role is to be a guide for individuals to find what works for them to enjoy eating, have a healthier relationship with food and their bodies, and improve their well-being. My goal is to contribute to a more equitable and sustainable food and healthcare system.
Rebecca Valdez is a registered dietitian nutritionist passionate about food justice, equity, and sustainability. She empowers clients to advocate for their own health while practicing gentle nutrition and compassionate self-care. She approaches nutrition counseling through a cultural, individualized, and weight-inclusive lens.
As a nutrition communications consultant, Rebecca combines her love of food, nutrition, and storytelling to help brands and organizations problem-solve and craft compelling messages. Her past experience includes working for a child nutrition research and policy center, an urban farm and youth development organization, and a global communications and marketing firm.
She mentors and advises BIPOC nutrition and dietetic students through Diversify Dietetics programs and volunteers as the Editor of the Academy of Nutrition and Dietetics's Business and Communications newsletter, Business Insights.
