Thyroid-Friendly Recipes: Green Smoothie

Smoothies are a popular way to get healthy vegetables and fruit in a fast, easy drink. But, so many smoothie recipes rely on raw cruciferous vegetables — like kale and spinach — that when consumed raw and in higher concentrations can be goitrogenic. This means they can actually slow down your thyroid

So if you're in the mood for a smoothie, here's a delicious, thyroid-friendly recipe. 


1 bunch organic greens (I used kale)

1 bunch organic parsley or organic cilantro 

5 stalks fresh crisp celery

1 large cucumber 

2 ½ - 3 tablespoons of coconut oil

Filtered water 

Get Your Vegetables Ready

Wash all the vegetables

Set up your steamer basket (get the water going) – or set up your electric vegetable steamer

Steam the greens until they turn bright green – you cannot miss the “bright green” hue!  (Note: steaming the vegetables helps remove most of the thyroid-slowing goitrogenic potential!)

The steaming usually takes about 90 seconds to 2.5 minutes. 

Don’t turn the steamer off.

Cut the celery into big chunks.

Blending Your Thyroid-Friendly Green Smoothie

Put the celery into your blender, smoothie machine, VitaMix, or whatever you have!

Add steamed greens to blender

Add water to blender – around ¾ cup. 

Blend blend blend blend blend and then BLEND SOME MORE!!!!!  No over-chunky smoothies!!!

Adding More Vegetables To Your Smoothie

Cut cucumber into large pieces and add to blender as well. 

Keep that blender going…

Steam the parsley (90 seconds max) and add to the blender. 

Add the coconut oil to the blender.

This should result in a VERY full blender – of yummy dense green smoothie!!

I then put this into several glass containers (do not overfill!) and into the fridge for up to 48 hours.

When you get ready to drink your smoothie, pour in maybe 1/8-1/4 cup water and SHAKE it really well, as it congeals and becomes very thick and you need to soften it up in order to drink.

By the way – I would highly recommend a VitaMix or Ninja or a heavy duty mixer for this.  (My KitchenAid blender got a SERIOUS work out from this smoothie!)
